So this recipe requires a little extra effort just because of the Crispy Fried Onions, but it’s totally worth it if you’re a green bean casserole fanatic and want to see it on your keto/low carb holiday dinner table.

I could have stopped with the Low Carb, Keto Crispy Fried Onions (and eaten them all then and there), but I forged onward for my husband’s sake and for Green Bean Casserole lovers everywhere.

The onions are a little tricky because they’re coated with coconut flour and parmesan cheese, so you don’t get that pretty golden color that you would from a can of French’s artificially-colored and -preserved fried onions. That’s totally okay with me though. I’ll take healthy over pretty, and the melted cheddar cheese on top helps too.

Ingredients
  

For the Low Carb, Keto Crispy Fried Onions

  • 4 small yellow onions about 1 lb.
  • 3 eggs
  • 1/2 c. coconut flour
  • 1/2 c. grated parmesan
  • 1 tbsp. garlic powder
  • 1 tsp. cayenne
  • 2 tsp. sea salt
  • For the Low Carb Keto Green Bean Casserole
  • 2 14.5 oz. cans French style green beans
  • 1 c. condensed cream of mushroom soup
  • 1.25 c. shredded cheddar cheese separated

Instructions
 

For the Low Carb, Keto Crispy Fried Onions

  • Remove tops and bottoms from onions and peel, wash and halve them top to bottom.
  • Lay the flat halves down and slice into very thin semicircles. Use a mandolin if you have one.
  • Beat the eggs in a shallow bowl.
  • Combine dry ingredients in a separate bowl.
  • Soak the onions in the eggs for 60 seconds, making sure each surface of each onion sliver is covered.
  • Use a fork to separate the onion slivers and coat with the egg mixture.
  • In small batches, dip the coated eggs into the flour mixture and place on a piece of parchment paper on a baking sheet.
  • AirFry for 7 mins at 350°F.
  • Toss, flip and AirFry another 7 mins, ensuring the onions don't burn.
  • For the Low Carb, Keto Green Bean Casserole
  • Preheat the oven to 350°F.
  • Mix the green beans, half the crispy fried onions, the cream of mushroom soup and one cup of the cheddar cheese.
  • Spread into a greased pie dish.
  • Bake for 30 mins, until bubbly.
  • Sprinkle with remaining onions and 1/4 cup cheese.
  • Bake an additional 5-10 minutes or until cheese is melted.

    You can also cut your squash in half, and put it in a casserole dish in the microwave to cut down on time. Put the squash in the dish face down, and add about an inch of water to the dish. It will only take about 10-15mins depending on microwave strength. Love this recipe, can’t wait to try!

    Can I sub almond flour for the coconut flour? I don’t have coconut flour.
