  1. Muddle mint leaves in the bottom of cocktail shaker.
  2. Add rum, lime juice, erythritol blend and ice. Shake until erythritol blend is dissolved, about 30 seconds.
  3. Strain into a highball glass over fresh ice.
  4. Top with seltzer.
  5. Garnish with a mint spring and lime wedge or wheel.
