  1. In a Dutch oven, melt the beef tallow over medium-high heat. Add the onions. Cook 2 minutes.
  2. Add the ground beef and cook 5-7 minutes, or until browned.
  3. Add the tomato paste and spices.
  4. Cook 2 minutes, stirring continuously.
  5. Add the beef broth, apple cider and apples.
  6. Bring to a boil.
  7. Reduce heat and simmer 20-30 minutes, or until liquid has cooked down.
  8. Add additional sea salt and chipotle powder to taste.
