Thirty Days of Whole30 Meals – Day 4

Join my family and me as we start out 2017 Whole30-style! These are our Thirty Days of Whole30 meals.

Day 4 of our Whole30 is down, and things are getting a little more difficult. I ran out of pre-planned meals, so I made today’s Whole30 meals on the fly. I woke up feeling energized but starving after not eating dinner the night before.

Breakfast

For breakfast, I made some bacon, sliced up a blood orange (they’re so pretty!) and drizzled EVOO and balsamic vinegar over a handful of fresh spinach.

Lunch

For lunch, I had some more leftover Paleo & Whole30 Creamy Chicken Tomato Soup, but this time I served it over a big handful of fresh kale. It helped change things up a bit, gave the soup a little more texture and incorporated a little more leafy greenery into my meal. I drank a Cerise Limón (Cherry Lime) La Croix

Dinner

For dinner, we had a pot roast that I threw in the slow cooker before work. I seasoned each side with salt and pepper and browned it in a skillet before placing it in the slow cooker. I went through my spice cabinet and added everything that sounded like it might be good. I added onion powder, garlic powder, smoked paprika, chili powder and thyme. Basically just a little bit of everything, and it was great! Super tender, falling apart and very flavorful! I served it with a small baked potato drenched with ghee and some French green beans.

I craved a glass of wine tonight like something awful, but I didn’t give in. I had two ounces of 100% pomegranate juice topped with sparkling water in a fancy glass on the recliner with my feet propped up instead.
