Thirty Days of Whole30 Recipes – Day One

For months, I’ve been telling myself I wanted to try the Whole30 program.  I bought the book and collected a bunch of Whole30 recipes, but I never got around to actually committing to do it.  Over the past few months, things changed.  I put on a few pounds.  I started feeling tired and lethargic all the time.  My face started breaking out, and I began having stomach problems.  Lots of them.  It finally all came to a head this past weekend, and I decided it is time for a change.  Right now.

Today marks Day One of my family’s Thirty Days of Whole30.  It’s not going to be easy, especially with two birthday parties, a couple work luncheons, and tailgating party coming up within the next month. But I intend to stick with it, not just for my sake, but for my family’s sake, too.  I welcome you to join my family in our journey of health and try some of our simple, deliciously healthy Whole30 recipes.

Day One Whole30 Recipes

Breakfast

For breakfast this morning, we started off simple.  Scrambled eggs cooked in coconut oil with a dash of garlic salt, steamed broccoli, and some sliced tomato, along with a glass of unsweetened mint green tea.

Lunch

Before work, I fried some cube steak.  I melted some coconut oil in the skillet and added the steaks, covered in salt, pepper, garlic powder, onion powder, and thyme.  I cooked them on both sides until they were nice and brown and starting to get crispy.

Whole-30-Steak-Salad-3 Whole-30-Steak-Salad-2For lunch, I threw together a bag of iceberg salad mix topped with sliced steak and a splash of oil and vinegar.  It was delicious!

Dinner was super-easy because when I was cooking the steak for lunch, I browned extra for later.  I descaled the skillet with a half cup of beef broth to get all those nice, crispy bits of flavor and combined it in the slow cooker with three of the largest cube steaks, along with a can of petit diced tomatoes, two cups of mushrooms, and two cups of beef broth.

I came home about 8 hours later to find the steaks had practically broken apart on their own and turned into a wonderful steak soup.  I used a spatula to break down the rest of the pieces, giving the soup an almost chili-like consistency.

We grilled come mini sweet potatoes, sprinkled them with a bit of cinnamon and nutmeg, and added a dollop of coconut butter.  Mmmmm…pure bliss!
