This keto Mexican meatloaf is a perfect gluten-free family weeknight dinner. Packed with tasty, healthy ingredients like a whole container of the freshest, juiciest salsa, black olives, crumbled queso fresco, cilantro, a little coconut flour, and a couple pantry staples, this isn't your grandma's meatloaf.
In a large mixing bowl, mix all ingredients well. Use your hands and don't overmix.
Form into a loaf on a rack placed over a roasting pan. See photo in blog post below this recipe for an example. Mine was approx. 12.5"x5.5"x2".
Bake until the ground beef is cooked through to 160°F at the center of the thickest interior point. Ours took 1 hour.

Reserve 1/4 of the salsa to serve over top of the meatloaf. Alternatively, purchase two containers and use a full 12 oz in the meatloaf mixture and as much as you like over top. Nutrition facts include one 12 oz. container of salsa.If you are salt-sensitive, cut the salt in half. You can sub sea salt or iodized salt for the kosher salt. If you do, cut it to 1 teaspoon. For a spicier dish, add some finely diced jalapeños into your initial meatloaf mixture.This recipe makes 12 servings. Three pounds is a lot of meat. Our family of six loves leftovers.
