Juicy chicken thighs are seasoned with salt, pepper, and oregano, seared until golden brown, and simmered in a creamy parmesan sauce with fresh cherry tomatoes and spinach. This creamy Tuscan chicken recipe is keto and low carb, quick and easy, simple and delicious. Decadent parmesan cream sauce is the perfect complement to crispy seasoned chicken thighs and fresh tomatoes and spinach. Inspired by Olive Garden's creamy Tuscan garlic chicken recipe.
In a skillet over medium-high heat, heat the oil. Season tops of chicken thighs with salt, pepper, and half of the oregano and lay in the skillet tops down. Season the bottoms of the thighs with the remaining spices. Cook until golden brown on each side, 5-10 minutes per side. Remove from skillet and set aside.
In the same skillet over medium heat, melt the butter. Stir in garlic and cook until fragrant, about 1 minute. Add cherry tomatoes and stir until the tomatoes are beginning to burst. Now, add the spinach and cook until it begins to wilt.
Stir in heavy cream and parmesan and until mixture just starts to bubble. Reduce heat to low and simmer about 5 more minutes, until the sauce reduces. Add salt and pepper to taste. Return the chicken to skillet and cook until cooked through, another 5 to 10 minutes. Use a meat thermometer to ensure it reaches at least 165°F. (I prefer the texture of chicken thighs cooked to 175°F.) Serve immediately.
