Keto Sausage and Rotel Cheese Dip

This keto sausage and Rotel cheese dip is an easy, low carb-friendly dish for the big game, your office potluck or a holiday gathering. I like to serve it with red bell pepper scoops, cucumber slices and celery sticks. You can also spoon some onto my Keto Crackers – Low Carb Cheese Crackers.

For spicier dip, use hot Italian sausage, habanero Rotel or a combo of the two. You can also add some diced fresh jalapeño or red pepper flakes. I love spicy foods but stay pretty mild when I’m cooking for a crowd.

Ingredients
  

  • 1 lb mild Italian sausage browned
  • 8 oz cream cheese softened
  • 1 lb mild queso blanco
  • 10 oz can fire-roasted tomato Rotel drained
  • 1 c low moisture part skim mozzarella
  • 2 tsp paprika

Instructions
 

  • Add all ingredients to the slow cooker, mix well and cook on high for one hour. YIelds about 6 cups.

    What is 1 lb queso blanco? Is that a shredded cheese blend?
