For the Low Carb, Keto Crispy Fried Onions

  • 4 small yellow onions (about 1 lb.)
  • 3 eggs
  • 1/2 c. coconut flour
  • 1/2 c. grated parmesan
  • 1 tbsp.  garlic powder
  • 1  tsp. cayenne
  • 2 tsp. sea salt

For the Low Carb, Keto Crispy Fried Onions

  1. Remove tops and bottoms from onions and peel, wash and halve them top to bottom.
  2. Lay the flat halves down and slice into very thin semicircles. Use a mandolin if you have one.
  3. Beat the eggs in a shallow bowl.
  4. Combine dry ingredients in a separate bowl.
  5. Soak the onions in the eggs for 60 seconds, making sure each surface of each onion sliver is covered.
  6. Use a fork to separate the onion slivers and coat with the egg mixture.
  7. In small batches, dip the coated eggs into the flour mixture and place on a piece of parchment paper on a baking sheet.
  8. AirFry for 7 mins at 350°F.
  9. Toss, flip and AirFry another 7 mins, ensuring the onions don’t burn.

For the Low Carb, Keto Green Bean Casserole

  1. Preheat the oven to 350°F.
  2. Mix the green beans, half the crispy fried onions, the cream of mushroom soup and one cup of the cheddar cheese.
  3. Spread into a greased pie dish.
  4. Bake for 30 mins, until bubbly.
  5. Sprinkle with remaining onions and 1/4 cup cheese.
  6. Bake an additional 5-10 minutes or until cheese is melted.
