It’s also super-easy to make. Ten minutes and some fresh tomatoes, onion, garlic, cilantro, lime juice and avocado oil, and you’re good to go. Add a jalapeño for a kick and pink Himalayan sea salt to taste. I love this chef’s knife for chopping all my veggies (My hubby surprised my with the whole championship BBQ knife set.) and and this pair of herb scissors for the cilantro.

Ingredients
  

  • 3 medium tomatoes seeded and diced
  • 1 medium white onion diced
  • 2 cloves garlic minced
  • 2-3 tbsp. fresh lime juice to taste
  • large handful fresh cilantro finely chopped
  • 1 jalapeno finely diced
  • 1/2 tsp. pink Himalayan sea salt plus more to taste
  • 1 tsp. avocado oil

Instructions
 

  • Mix all ingredients.
  • Add additional salt and fresh lime juice to taste.
  • Refrigerate at least 30 minutes before serving.

Notes

Store in the refrigerator for up to 4 days in an airtight container.
