Paleo and Whole30 Pico de Gallo

  • 3 medium tomatoes, seeded and diced
  • 1 medium white onion, diced
  • 2 cloves garlic, minced
  • 23 tbsp. fresh lime juice (to taste)
  • large handful fresh cilantro, finely chopped
  • 1 jalapeno, finely diced
  • 1/2 tsp. pink Himalayan sea salt, plus more to taste
  • 1 tsp. avocado oil


  1. Mix all ingredients.
  2. Add additional salt and fresh lime juice to taste.
  3. Refrigerate at least 30 minutes before serving.


Store in the refrigerator for up to 4 days in an airtight container.
