If you’re following a strict clean keto diet, be sure to check the sausage and the queso you use to ensure they don’t have questionable ingredients. This keto sausage and Rotel cheese dip can also be made on the stovetop if you’re in a hurry.
For spicier dip, use hot Italian sausage, habanero Rotel or a combo of the two. You can also add some diced fresh jalapeño or red pepper flakes. I love spicy foods but stay pretty mild when I’m cooking for a crowd.
Keto Sausage and Rotel Cheese Dip
- 1 lb mild Italian sausage browned
- 8 oz cream cheese softened
- 1 lb mild queso blanco
- 10 oz can fire-roasted tomato Rotel drained
- 1 c low moisture part skim mozzarella
- 2 tsp paprika
- Add all ingredients to the slow cooker, mix well and cook on high for one hour. YIelds about 6 cups.
