This Coconut Avocado Drizzle is light, cool and creamy with a tropical vibe. And oh yeah, it’s Whole30-compliant, Paleo, dairy free + all kinds of healthy.

Raise your hand if you love spicy foods! Yeah, me too! From chicken wings doused in habanero sauce to chicken salad filled with fresh jalapeños to Chipotle Lime Chicken Stuffed Poblano Peppers, I love all things spicy. <3

These Chipotle Lime Chicken Stuffed Poblano Peppers are a Mexican fiesta in your mouth. The spicy ground chipotle, slightly sweet + tangy lime juice and smoky poblanos create a mouthwatering combo. Did I mention they are Paleo and Whole30-compliant?

That being said, sometimes you need a little something to cool things down. To offset that I-can’t-stand-to-take-another-bite-but-yes-I-can-because-it’s-so-darned-good spiciness. That’s where this Coconut Avocado Drizzle comes in to play. It’s light, cool and creamy with a slight tropical vibe. And oh yeah, it’s Whole30-compliant, Paleo, dairy-free and all things healthy. Because coconut. And avocado.

This Coconut Avocado Drizzle is meant to be drizzled, poured, slathered and smeared on spicy food. It doesn’t have much kick to it standing alone, so I wouldn’t recommend it as a veggie dip or served with anything lacking flavor. If you do decide to use it as a dip, make sure to add some chili powder or cayenne pepper to give it a life of its own. But that’s probably a whole other recipe. “wheels turning…”

  • Mix all ingredients in a NutriBullet or Ninja Blender until blended well. (I have both appliances and love them equally for different reasons.)

If you don’t have a NutriBullet or a Ninja Blender with the single serve option, you have to add it to your wish list! I’ve had the NutriBullet for several years and loved it so much. I use these handy little blenders to make marinades like my Rosemary Garlic Steak Marinade and this  Jalapeno Lime Chicken Marinade and smoothies like my Pineapple Papaya Green Smoothie and this Raspberry Lemonade Smoothie. I finally upgraded to the Ninja Blender that also has the single serve option, and I’m in love. Don’t worry- I  didn’t abandon my beloved NutriBullet. I took it to work in it’s travel bag so I can make smoothies on the fly.
