Low Carb, Keto Broccoli Casserole – Gluten Free, Grain Free

This Keto Broccoli Casserole brings back all the flavors of the traditional casserole but with a low carb, keto-friendly twist. Canned cream of mushroom soup is substituted with my homemade Condensed Cream of Mushroom Soup, and a toasted no-carb cheese topping replaces the usual breadcrumb crust.

Growing up, my grandma’s broccoli casserole was my favorite. Every Thanksgiving, Christmas and Easter, I looked forward to that dish. Weird, I know. But it has mayo, and mayo is my thing.

You know how ketchup is some people’s thing? They dip everything in it. Ketchup‘s their thing.

Mayo is mine. Also cheese. Okay, and hot sauce. But I digress. Let’s get back to this Low Carb, Keto Broccoli Casserole.

Thanksgiving was always THE holiday for my family. The one that, no matter how busy and frazzled we became, the whole family always managed to corral together to just BE. Together.

Things are a little different now that three of my grandparents have been laid to rest. It doesn’t change my fondness for the day though. Bittersweet memories combine with new traditions made with my own sweet little family to morph into a new special day with new traditions and more precious, silly memories.

Unfortunately, Thanksgiving isn’t know for it’s low carb, keto-friendly dishes. Well, I’ve set out to change that. I want to have my Low Carb, Keto Broccoli Casserole and eat it too. My first try turned out quite nicely, if I do say so myself. Next time, I’ll combine some dried parsley and freshly ground black pepper with the crumbly cheese crust.

Description

This Keto Broccoli Casserole brings back all the flavors of the traditional casserole but with a low carb, keto-friendly twist. Canned cream of mushroom soup is substituted with my homemade Condensed Cream of Mushroom Soup, and a toasted no-carb cheese topping replaces the usual breadcrumb crust.

Instructions

  1. Preheat oven to 350°F.
  2. In a mixing bowl, combine broccoli, onion, mayonnaise, egg, Condensed Cream of Mushroom Soup, cheddar cheese, parmesan and garlic powder.
  3. Add to greased baking dish and spread evenly.
  4. Pulse Cheddar Cheese Whisps in a food processor and combine with melted butter.
  5. Spread topping mixture onto the top of the casserole, cover with foil and bake for 30 minutes.
  6. Remove foil and broil for a minute or two until topping begins to brown.

Notes

Mix some dried, crushed parsley and freshly ground black pepper into the crumbly cheese crust for an added treat.
