How MY no cook keto meal plan HELPED me

Several events over the past five years worked together to create the perfect storm and my own personal hell, leading me to the photo on the left above.

This past April, I was heavier than I’d ever been. I was exhausted all the time, grumpy, sad, depressed, and anxious, and I wasn’t able to sleep, which exacerbated everything else.

I’ve been making healthy recipes for a while now, and I know how keto works, but juggling an amazing job, a blog, and homeschooling three kids really made it difficult to make my own health a priority.

Staying on track each day was incredibly difficult, and I thought I’d never get back to my “old self.”

I made this seven day no cook meal plan for myself. I created nine super easy “no cooking required” recipes that matched my ideal macros and left room for a few tweaks or a snack during the day. 

I kept the cost as low as possible by repeating recipes every few days and reusing ingredients when possible. This way, my meals averaged out to less than $4 each, but I didn’t feel like I was eating the same foods over and over. 

Because the time and monetary investment was so small, I was able to make my own no cook meals on the side while my family ate as normal. Throughout my journey, I have slowly transitioned my family to eating mostly grain-free and gluten-free meals, and they now love smoked meats, grilled veggies and keto-fied like fathead pizza and no-sugar ice cream.  

For me, this no cook meal plan was a quick fix to a healthier life. I was able to drop twenty pounds fast, gaining back some of my energy and self-confidence and giving me the boost I needed get back into my groove and start being active again.

 I’ll never be my “old self” again, but here’s my “new self,” and now the pic on the right is my new “before.” Can’t wait to see the new “after!”

I still have a long way to go, but I feel alive again and ready to go into 2022 full steam ahead.
