This keto sausage and Rotel cheese dip is a great low carb potluck dish for your office party or holiday gathering. Serve it with red bell pepper scoops, cucumber slices and celery sticks.
Add all ingredients to the slow cooker, mix well and cook on high for one hour. YIelds about 6 cups.

For spicier dip, use hot Italian sausage, habanero Rotel or a combo of the two. You can also add some diced fresh jalapeño or red pepper flakes. I love spicy foods but stay pretty mild when I'm cooking for a crowd.
