I’m a fan of easy slow cooker meals. Especially during the week. And especially during the winter. Because, soup. Just dump everything in, push a button and in four hours, have a steaming hot, flavorful, spicy restaurant-quality pot of soup waiting for me? Heck, yeah!

I am lucky to work close enough to home that I can come home to eat on my lunch break. It helps me stick to a healthy diet, even when I don’t have time to pack a lunch. I can still peruse the fridge for carrot chips and guacamole or pre-cooked shredded chicken I usually keep on hand.

We normally eat dinner leftovers for lunch, but I also like to whip up easy slow cooker meals in the morning that will be ready by noon. This Paleo and Whole Coconut Curry Chicken Soup is one of those easy lunchtime meals.

Keto Coconut Curry Chicken Soup, Paleo and Whole30

Ingredients

Instructions

  • Add all ingredients to slow cooker. If you like spicy foods, add another teaspoon or 2 of red curry paste.
  • Cook on high 3-4 hours or low 5-6 hours, or until chicken reaches an internal temperature of 165°F.
  • Remove chicken, and use two forks to shred.
  • Replace chicken into the slow cooker and mix well.
  • Serve into bowls and squeeze half a lime over each serving.
  • Garnish with cilantro, if desired.
