Hey y’all! Do you like extra creamy, cheesy casseroles? Pesto? Easy weeknight dinners that you can prep in advance for the hectic week ahead? YES!? Well then, this Keto Cheesy Pesto Chicken Casserole is the recipe for you!

Instructions

  1. Preheat oven to 400°F.
  2. Grease an 8″ x 8″ casserole dish.
  3. Mix the shredded chicken, mayonnaise, sour cream and homemade pesto.
  4. Stir in 1 cup shredded mozzarella and 1/2 cup shredded parmesan.
  5. Add a bit of freshly cracked black pepper to taste.
  6. Stir in the eggs and mix until combined well.
  7. Layer the chicken mixture in the bottom of the casserole dish.
  8. Sprinkle evenly with the remaining mozzarella and parmesan cheeses.
  9. Bake at 400°F for 20 minutes or until bubbly and browned.
  10. Place under the broiler for 2-3 minutes to brown the top a little more if desired.
  11. Serve with optional garnishes such as fresh basil, toasted pine nuts, grated parmesan or a dollop of homemade pesto.

    You can use plain Greek yogurt in nearly any recipe that calls for mayo.

    Great flavor!! However, ours was not quite a soup, but it definitely didn’t form into a casserole. Wondering what we did differently.

    This was excellent and I will definitely make it again. The only changes I made were to beat the 2 eggs before adding to the chicken/cheese mixture. It makes it much easier to incorporate. I also added sliced tomatoes from my garden to the top before adding the final cheese under the broiler. Great, easy recipe that I will definitely make again!

    I didn’t see eggs under the ingredients list but I saw under the instructions to stir in eggs. How many eggs should I stir in? Thank you so much for the recipe!

      It’s at the bottom of the ingredients list and instructions so you can add S&P to taste before you add the eggs. 2 large eggs.
