Happy New Year! I can’t quite believe it’s 2017! Last year just flew by. We were in the midst of a big renovation, and I got a new job. Those things transpired simultaneously with a lot of sleepless nights, courtesy of a perpetually teething baby, and I forgot to slow down and enjoy life. This year will be different. My New Year’s resolution is not to be healthy. That’s a given. That’s something I have to do to fulfill my real resolution. My New Year’s resolution is to really live my life this year. To appreciate the joy in every single day and to fully and actively love my husband and my children daily. Not just make it through. I have so much to be thankful for, and my goal is to bask in that gratefulness. Eating whole foods and living healthily is just a perk along the way. A means to an end.

If eating healthily is one of  the paths to a happy life, then this Paleo & Whole30 Mocha Latte is the mortar holding the all those bricks together. This is a play on the Paleo & Whole30 Cinnamon Vanilla Latte I made a couple weeks ago, but with chocolate! IK,R!? One hundred percent cacao IS allowed on the Whole30 plan, as long as there are no sweeteners involved.

Paleo & Whole30 Mocha Latte

Ingredients

  • 1 1/2 c. coffee freshly brewed
  • 1 c. canned coconut milk
  • 4 tsp. 100% cacao powder
  • 1/2 tsp. vanilla powder

Instructions

  • Warm the coconut milk over medium-high heat until hot but not boiling, about 4-5 minutes.
  • Add everything to a NutriBullet or other high-powered blender.
  • Blend 15 seconds.
  • Enjoy!
