Creamy Tuscan Chicken (Only 9 Ingredients!)

This creamy Tuscan chicken recipe is quick and easy, simple and delicious, low carb and keto-friendly. Decadent parmesan cream sauce is the perfect complement to crispy seasoned chicken thighs and fresh tomatoes and spinach. Inspired by Olive Garden’s creamy Tuscan garlic chicken recipe.

This creamy Tuscan chicken is one of those quick and easy dinners that looks and tastes like you spent a really long time on it. I love that it’s only 9 ingredients (plus salt and pepper) and that everything is super fresh and good for you. It’s so comforting on a chilly night too.

I used chicken thighs, but you can easily substitute chicken breasts if you prefer. To make it a meal, serve with a side salad or over a bowl of steamed broccoli, sautéed cabbage, Palmini noodles, or garlic butter mashed cauliflower. YUM

How to Make Creamy Tuscan Chicken (recipe card at the bottom)

First, you’ll want to wash and halve your tomatoes, wash the spinach, and trim any excess fat off the chicken thighs.

Next, season the chicken thighs with salt, pepper, and dried oregano, and brown on each side in olive oil.

Here comes the garlic butter sauce that I could drink from a mug….

Now toss the veggies in the sauce until they’re warm.

Add a little cream and a good bit of fresh Parmesan.

And put the chicken back in, ensuring it reaches 165°F. (I prefer the texture of chicken thighs at 175°F.) Enjoy immediately. 🥰

Ingredients
  

  • 2 tbsp extra-virgin olive oil
  • 2 lb boneless skinless chicken thighs
  • salt and pepper to taste
  • 1 tsp dried oregano
  • 4 tbsp butter
  • 5 cloves garlic minced
  • 10 oz cherry tomatoes halved
  • 3 c fresh baby spinach
  • ½ c heavy cream
  • ¼ c freshly grated Parmesan

Instructions
 

  • In a skillet over medium-high heat, heat the oil. Season tops of chicken thighs with salt, pepper, and half of the oregano and lay in the skillet tops down. Season the bottoms of the thighs with the remaining spices. Cook until golden brown on each side, 5-10 minutes per side. Remove from skillet and set aside.
  • In the same skillet over medium heat, melt the butter. Stir in garlic and cook until fragrant, about 1 minute. Add cherry tomatoes and stir until the tomatoes are beginning to burst. Now, add the spinach and cook until it begins to wilt.
  • Stir in heavy cream and parmesan and until mixture just starts to bubble. Reduce heat to low and simmer about 5 more minutes, until the sauce reduces. Add salt and pepper to taste. Return the chicken to skillet and cook until cooked through, another 5 to 10 minutes. Use a meat thermometer to ensure it reaches at least 165°F. (I prefer the texture of chicken thighs cooked to 175°F.) Serve immediately.
